DESIGN INSPIRATION FROM OATMEAL COOKIES
Design Inspiration from a Batch of Oatmeal CookiesDesign inspiration comes in all forms and fashions. Last weekend it came in the form of a creative cookie recipe.I have shared my love of baking with my daughter since she could stand on a chair at the kitchen counter. Now that she is 13 years old, she can bake from scratch on her own. We had some instant oatmeal that I had mixed up that was half plain and half maple. Well, the kids rejected my “low-sugar” oatmeal and would not eat it. That’s no surprise.My daughter and I came up with the idea to make some cookies with the low sugar oatmeal mixture. My kids never met a cookie they didn’t like…well neither have I! We altered the recipe a bit and my daughter whipped up a batch of oatmeal cookies with chocolate chips. They were Mmmm good! The idea was brilliant! We didn’t waste the oatmeal and the cookies had a lightly maple flavor that everyone enjoyed.We redesigned the recipe like we redesign a room or a piece of furniture. Today I would like to inspire you to take a look at a room in your home. Can you rearrange the furniture? Maybe you can switch a piece of furniture or art from another room in the house. The oatmeal cookie recipe is below!2 sticks of butter, softened1 1/4 C packed brown sugar1/2 C granulated sugar2 tsp vanilla extract2 large eggs1 1/2 C flour1/2 tsp baking powder1/2 tsp salt1 2/3 C maple instant oats1 2/3 C plain instant oats or quick oats2 C chocolate chips…or more if you like chocolate like I do!1. Heat oven to 350F. 2. Beat butter, sugar and vanilla on MEDIUM speed of electric mixer until creamy. Beat in eggs until light and fluffy. 3. Mix in four, baking powder and salt on LOW speed until well blended. Stir in oats. Stir in chocolate chips. 4. Refrigerate dough for two hours because your cookies will set up and taste better (or skip this step if you’re in a hurry to eat your cookies). 5. Form dough into 2-inch balls and place on cookie sheet about 2 inches apart. Bake 10-12 minutes or until edges start to turn golden brown and center is still slightly soft. Let cool on cookie sheet 2 minutes. Remove to wore rack, let cool. Eat and enjoy!
